Papaya comes from the family of Caricaceae and its scientific name is Carica papaya. Papaw, pawpaw are other names of Papaya. They are succulent plants which grows in tropical and sub-tropical regions of the world. They look similar to the palm trees when grown fully. Their fruits are cylindrical to oval in shape. The raw papaya are green in colour and white from within and the riped papayas are orange in colour. The skin of riped papaya needs to be peeled off and seeds need to be scraped off before it can be consumed. Consuming papaya daily gives one sufficient amount of vitamin C that is required throughout the day.
Papaya has been in our diet since our childhood. My mother makes it a point that I eat fruits every day and amongst them is papaya which is sweet and yummy filled with juices and vitamins. Everyone enjoys them in some form, some have papaya along with other fruits in form of juice, some add milk and prepare shakes, while others prefer to have them in cuts or slices.
Do you know one can even prepare many dishes with raw papaya. Unripe papaya is green from outside and white from within. We can even make parathas with raw papaya and they are very delicious. I have been having them since my childhood. My mother makes them by grating raw papaya and mixing them with onions, green chillies.
After the mixture is prepared, they are stuffed into circular dough which is closed after the stuffing is filled properly and the rolling pin is used to give it a shape of a parantha. They are then cooked on a tawa with a little ghee/ oil until they are cooked and nice and crisp. You can enjoy them with white butter, yogurt along with it.

Ingredients for raw papaya stir fried vegetable (serve - 3 pax)
1/2 medium size raw papaya/1.5 cups grated raw papaya
1/2 cup shredded cabbage
1/2 cup moong dal sprouts or any other sprouts
1/4th cup roasted groundnuts
1 tsp salt
1/4th tsp turmeric powder
1/4th tsp black pepper powder
1 tsp red chilli flakes
1/2 lemon
For tempering tadka
1 tsp jeera cumin whole
1 tsp mustard seeds
1/2 lemon
3 tbsp oil in tadka
Preparation of raw papaya stir fried vegetable
Heat oil in a heavy bottomed pan and add the cumin and mustard seeds. Stir fry for 30 seconds till they splutter.
Now first add the seasoning and immediately add the vegetables and sprouts. Stir and mix well.
Keep stirring and frying for 5mins. Add the groundnuts. Mix and fry for a minute. Put off the flame.
Squeeze the lime on top and serve hot.

Preparing stir fried vegetable from raw papaya in 15 minutes is very simple and easy. You will get a delicious dish in the end. To make the recipe of stir-fried raw papaya heat oil in a pan, add cumin and mustard seeds. Stir fry for few seconds. Then add the seasoning followed by adding the vegetables and sprouts. Stir and mix well. Keep stirring for 5 minutes then add the groundnuts. Mix and fry for a minute and turn off the flame. Squeeze the lemon over it and serve hot.
