Delicious Chicken dry roast | 2022

Delicious Chicken dry roast is prepared in a unique way in every household. Some like the poultry to be shallow fried with spices, while there are some who like it to be kept simple. Everyone has a unique taste. I am sharing my experience how it is preferred in my family along with the accompaniment like pickled onions.

    Wash the chicken.  Marinate it with curd, turmeric powder, ginger garlic green chilli paste, small cardamom, red chilli powder, garam masala, mustard oil

    Heat oil and add one red chilli dry, one bay leaf, 4 cloves, 2-inch Cinnamon stick.

    Add marinated chicken and mix well. Cover and let it cook for 30 to 45 minutes on high flame. Stir in between

    Check the salt and taste if it is cooked well. Add Kasturi methi and tomato sauce.

    Transfer it in a bowl and serve with accompaniment. 

    What is Chicken Roast?

    This is a recipe where chicken is eaten in a roasted form with breads. One can roast it either in tandoor or in microwave. This recipe is prepared by marinating chicken and then cooking it covered for 30 - 45 minutes stirring in between. You can also fry it. In this I am not frying the poultry to keep it healthy.

    I am sharing with you the recipe of how to simply prepare it on gas stove. This is relished all over the world.

     For Marinating

    Marinating-ingredients

    1kg - chicken

    1/2 cup thick curd

    2tbsp - ginger garlic green chilli paste

    1tsp salt

    1/4tsp turmeric

    Pinch of small cardamom

    1/4 red chilli

    1/4tsp garam masala

    1tbsp mustard oil

     Ingredients (Serve – 4 pax)

    Cooking-Ingredients

    Ghee- 1tbsp

    Bay leaf- 1 large or 2 small

    Cardamom – 1 whole

    Dry Red chilli – 1 whole

    Cloves – 4

    Cinnamon – 2 inch

    Black pepper whole - 4

    Kasturi methi – 1.5tbsp

    Tomato Sauce – 2tbsp

    Step By Step (photo wise)

    Ginger-garlic

    1). Prepare ginger garlic green chilli paste. Wash chicken thoroughly.

    Marinate-chicken

    2) Marinate with the ingredients mentioned above.

    Refrigerate-for-one-hour

    3). Refrigerate it for an hour or more.

    4).Heat oil in cooking pot and add whole spices. Cook for 30seconds on medium flame

    5). Add marinated chicken. Stir well so everything gets mixed properly. Cover and let it cook for on high flame for 30 - 45 minutes until soft and tender. 

    6).Stir and continue to cook.


    7). Uncover the lid and check if it is well cooked. If water is still there dry it on high flame. Add salt if required. Add kasturi methi and tomato sauce and stir well. Switch off the flame.

     8)Transfer it to serving bowl and serve hot.  

    Preparation

    1). Wash the chicken thoroughly under the running water. Prepare ginger garlic paste.

    2). Place the chicken in the bowl.

    3). Take red chilli powder, turmeric, curd, garam masala, pinch of cardamom, mustard oil, ginger garlic paste and marinate the chicken.

    4) Marinate and keep it in fridge with a cling film on top in order to retain the moisture for an hour or more.

    5) Heat oil and add bay leaf, cinnamon, cardamom, dry red chilli, cloves and black pepper whole and cook for 30 seconds on medium flame.

    6) Add marinated chicken and mix well with the whole spices stirring well for 35 seconds and then cover it.

    7) Let it cook covered on high flame while stirring in between to make sure it is cooked from all sides.

    8) After 30 to 45 minutes on high flame check the chicken. If there is water remove the lid and on high flame dry the water.

    9) After the water is dried add kasturi methi and sauce to chicken and mix. Let it cook for one more minute.

    10) Switch off the flame.

    11) Transfer the chicken in serving bowl and garnish with slit green chillies. You can garnish with onion rings or chopped coriander. Enjoy the dish.

     Notes:

    You can also shallow / deep fry the poultry. 
    You may use chilli sauce instead of tomato sauce.
    If you like it with thick gravy skip the step of drying water.
    You can use onion rings, coriander leaves for garnishing.
