Corn soup has high soluble fiber content which absorbs bad cholesterol and keeps the heart diseases in control. It has Vitamin A which keeps the vision sharp and vitamin B keeps the diabetes under control by maintaining the insulin levels. It is amongst the favorite dishes on the menu for weight watchers, it is low in calories. Drinking this soup helps to make the skin texture smooth from within giving healthier skin. When taken in winter it helps to boost the immunity thereby keeping the common cold at bay.
How corn can be used in different forms
After being cooked corn becomes soft, easy to chew and digestible. When added to soup their sweetness is unleashed which gives soup a sweet flavor along with benefits of other ingredients in form of many vitamins and minerals. One can add corn to numerous dishes. My favorite dish is Makki (maize) ki roti which is prepared with Makki flour and enjoyed with sarson ka sag.
This combination of Makki flour along with sag is a famous dish of Punjab and is relished with butter on top of the roti. We too prepare this dish during winters and enjoy it when served hot. Makki ka atta has numerous benefits that one enjoys along with the flavors and aroma. Some of the benefits are as follows:
Makki ka atta is the most frequently used flour after wheat flour. It is the best alternative for gluten free diet. The vitamins like A, B, C and k keep the immune system strong, skin healthy and complexion glowing.
Maize flour is vastly used in Central American countries especially Mexico in pizza’s, Nacho chips, tortilla and tacos etc.
Benefits Of Oats
I have used oats instead of normally used corn flour which is refined and devoid of nutrients as a thickening agent.
Oats are loaded with various vitamins and minerals like B1, B3, B5 and B6, phosphorus, magnesium, copper, zinc and iron. All these make oats super nutritious. They have antioxidant properties which help to keep our body free from toxic acid.
You may have seen in my article a lot of ingredients share antioxidant properties, but oats have a unique property named avenanthramides which can only be found in them. Antioxidants keep the blood vessels clear of any blockages ensuring smooth supply of blood to every organ. Oats have a soluble fiber that keeps the bad cholesterol under control. They are good for the people who follow gluten free diet, but before buying always do check the label on the packet mentioning it as gluten free.
Ingredients
1 grated corn cob
1/4 th cup carrots
1/4 th cup peas
1/2 cup milk
2 tbsp oats
Salt and black/white pepper to taste
1 liter water
Step By Step (photo wise)
Step 1
We start with grating a fresh bhutta/ corn cob.
Step 2
Take a heavy bottomed pan and add the water and grated corn.
Step 3

Keep cooking and stirring in between till the vegetables become tender. This will take 5-7 minutes. Then add the milk.
Add oats, salt and pepper. Boil for another 3-4 minutes.
Step 6
The soup is ready. Do add butter, vinegar or green chilies etc. as you like. We prefer to have it as it is.

Method
Grate the corn and keep it aside.
Take a heavy bottomed pan and add the water, grated corn, carrots and peas and keep stirring till it boils (around 3mins)
Keep cooking and stirring in between till the vegetables become tender. This will take 5-7 minutes.
Add the milk, oats, salt and pepper. Boil for another 3-4 minutes and the soup is ready.
Do add butter, vinegar or green chilies etc. as you like. We prefer to have it as it is.
