The version of this recipe is healthy and anyone can make it once they have seen the steps. I am sure you will like it once you prepare it yourself.
So, I thought why not try and make them at home and share with all of you. Today I have prepared Amazing Jhatpat Poori Wale aloo that we all relish and it is one the famous dish of Haridwar, Uttarakhand, India. Whenever I visit Haridwar I remember the aloo that I ate in my childhood along with my parents.
ABOUT JHATPAT AMAZING POORI WALE ALOO
Jhatpat poori wale aloo is a famous dish and it is relished all over India. It goes very well with poori and pumpkin. You can also have it with rice. When it comes to flavor this dish tastes very nice when served hot and it is spicy.
People in India love spicy food and that what makes the Indian food unique with so many types of spices in our country. You will never be satisfied with one serve and will always have a craving for more. Aloo is the most common vegetarian dish. There are various recipes that are prepared with potatoes like aloo Gobi, aloo methi, aloo paratha, aloo mutter. This recipe is made from a basic ingredient and is really easy to make. Let us start the recipe.
Ingredients (Serve - 4 pax)
8 boiled and roughly chopped medium size potatoes
3 tomatoes chopped
2 tsp grated ginger
1-2 green chili
1.5 tsp salt or to taste
2 table spoon heaped dhania powder
1/2 tsp turmeric powder
1tsp chat masala
1/4 tsp red chili powder or to taste
For tempering/tadka:
1tsp jeera/cumin seeds
1/4th tsp sarson/rai /mustard seeds
1/4th tsp methi seeds
2 pinches Hing /asafetida
2 red chilies
STEP BY STEP (photo wise)
Make a smooth puree of the ingredients above.
Heat oil in a vessel and add the ingredients mentioned for tempering. Cook them well for 25 seconds.
Add coriander powder, turmeric, powder, salt, chat masala, red chili powder or as per taste. Cook for 15 seconds make sure it doesn't burn.
Add boiled and chopped potatoes and mix in the masala we have prepared. Cook well for 1 minute. Let the potato soak the spices well.
Take potato masher and start mashing the potatoes. Stir in between.
Add water to the potatoes and cook for 2 minutes.
Your dish is ready to be served
Preparation
1) Take tomatoes, ginger, green chilies and make a smooth puree.
2) Heat oil. Add ingredients mentioned for tempering. Cook them well for 25 seconds.
3) Add salt, dhania powder, turmeric powder, chat masala, red chili powder and cook for 15 seconds.
4) Add tomatoes, grated ginger, green chili puree and cook for 1 minute or more. Stir in between.
5) Add chopped and boiled potatoes and mix them with the masala that we have prepared and let it cook for 1 minute. Let the potato soak the spices.
6) Take the potato masher and mash the potatoes. If you prefer them without mashing then skip this step.
7) Add water and cook for two minutes stirring well so that everything is mixed well and unique flavor comes to the dish.
8) Take a serving bowl and transfer the dish. Garnish it with coriander leaves and green chilies.
9). Jhatpat Poori Wale aloo is ready. Enjoy it with poori, rice or paratha

Notes:
- You Can make dry / wet recipe with this. If you need dry then don't add water.
- If you want semi dry add very little water in the end.
