Easy recipe of Cauliflower, Peas and Potatoes cooked in 45 minutes

Winters are setting in Indian sub-continent especially in the Northern parts. Cauliflower is a winter crop and it’s a popular vegetable in North India. There are numerous recipes that can be prepared from this vegetable and each is unique in taste, aroma and texture. It is called Gobi/ phool gobhi in Hindi. This delicacy is delicious and simple to prepare. The major ingredients that structure this recipe are green peas, potatoes and cauliflower. These three vegetables combined together make up an amazing dish which we know as aloo gobhi matar. This recipe is healthy, filling and can be quickly cooked.

    This vegetable can also be grown in your backyard and once it is ready, you’ll get freshly grown gobhi from your garden. You can prepare the aloo gobhi matar from the freshly harvested gobi that we are going to make today. You could also add it in vegetable biryani along with other vegetables or make parantha by grating the gobi.

    Gobi aloo matar dish can be prepared in a gravy form or dry form. I prefer it dry and like to have it with pulses and hot chapattis. So, let’s start our recipe.

    About Aloo Gobhi Matar Recipe

    This delicious recipe of matar gobhi aloo is cooked in a pan and is stir fried along with ginger, green chillies and Indian spices which gives this dish an amazing flavour. After the gobi is cooked coriander leaves along with garam masala is added which makes it complete.

    Aloo (potatoes), matar (green peas) gobhi (cauliflower) are available throughout the year in the market. There are farms near my home, in winters fresh peas are harvested and farmers come and sell their produce right till our doorsteps in their tractors. We buy them in bulk and freeze them for future use when they are no longer available in the market.

    In this recipe I have used frozen peas, you can use fresh peas also if they are available in your area.

    Anytime we prepare aloo gobhi matar, the scent it releases while cooking permeates the home, letting anybody walking by our house know what is cooking in the kitchen.

    Ingredients (serve - 4 pax)

    gobi-aalu-matar-ingredients

    1 medium size cauliflower cut into florets

    2 potatoes cut into 1-inch cubes

    1/2 cup peas fresh/ frozen

    2 tbsp finely chopped ginger

    1 finely chopped green chilli

    1.5 tsp salt

    1/2 tsp turmeric powder

    1/4th tsp hing asafoetida

    2 tbsp dhaniya powder

    1 tsp black pepper powder

    1/4th tsp red chilli powder

    Handful of chopped dhaniya leaves

    1 tsp garam masala

    3 tbsp oil

    Method

    Heat oil in a heavy bottomed pan and add chopped ginger and green chilli. Stir fry for a minute.

    Add the seasoning and immediately add the vegetables.

    Mix and cook for 2 minutes.

    Add 1/2 cup water and cover and cook stirring in between.

    After 25-30 minutes open the lid.

    The vegetables should be soft and the water should have evaporated.

    Now increase the flame to high and gently stir and cook for a minute.

    Add the coriander leaves and garam masala and stir for 15 seconds and put off the gas.

    Serve hot.

    How to prepare aloo gobhi matar

    Preparation before cooking

    Before we start with our recipe gather all the required ingredients. I have prewashed the cauliflower. If you have just brought it from the market keep it soaked for some time and drain it.

    Take the required quantity of the peas and wash them in a strainer and keep them aside.

    Cooking cauliflower vegetable

    heat-oil

     Take a heavy bottomed pan and add oil.

    Add ginger and green chillies. Stir fry for a minute.

    Add the seasoning.

    Add the vegetables. Mix and cook for two minutes.

    Add half a cup of water.

    Cook covered for half an hour stirring in between.

    Uncover the lid. The vegetables should have cooked and water must have evaporated.

    Add the chopped coriander leaves and garam masala. Stir for 15 seconds and turn off the flame.
