In our previous post of samak rice we had roasted all the rice which could later be used in other recipes. We will be using the roasted samak rice to make mouth-watering, delicious samak kheer. Samak kheer tastes similar to normal kheer and can be enjoyed and prepared anytime.
Sweets have special place in every Indian home while some buy sweets from the market others prefer to prepare them at home. Among them is kheer which can be prepared in different varieties like rice, semolina, sabut dana, carrot etc. Today we won’t be making any of them but, we will be preparing kheer from samak rice which is eaten a lot during Navratri festival and is relished by all.
Samak kheer is very filling, nutritious and is very simple to prepare and cooks faster compared to rice kheer. To give samak kheer a different flavour I have added dry fruits along with cardamom powder and saffron. Since Barnyard millet is not a cereal, it can be consumed during the fasts which gives energy and keeps one active even while fasting.
Ingredients for samak kheer (serve – 4 pax)
1/4th cup roasted samak rice
1/4th cup sugar
Assorted dry fruits, saffron and small green cardamom powder
Method
Put the milk to boil.
When it starts boiling add the samak and continue to stir for 3-4 minutes.
Lower the flame and keep cooking, stirring occasionally.
In the meantime, chop the dry fruits. After 10 minutes add the dry fruits, saffron and small green cardamom powder. Stir and cook for a minute.
Add sugar. Stir and cook for two minutes. Kheer is ready. Serve it hot or chilled as you like.

Conclusion
Samak kheer tastes similar to normal kheer and can be enjoyed and prepared anytime.
It is very filling, nutritious and is very simple to prepare and cooks faster compared to rice kheer. It keeps one energetic for the day during fasting.
To give samak kheer a different flavour I have added dry fruits along with cardamom powder and saffron.
