Coccinia Grandis is the scientific name of Kundru which belongs to the gourd family and is also known as ivory gourd and Tendli. This green vegetable is a climber that grows in tropical climates and has numerous benefits. Many relish this with chapatti and rice. This vegetable can be found in African and Asian countries. Its cooking process may be different, but its benefits are the same.
Kundru originates from India and is vastly used in Bengal to prepare vegetables. It is also famous in African countries.
In India it cultivated as a vegetable and is prepared differently across India. In south India it is used in sambar along with other vegetables. Some may like to chop it in cubes while some like to cut it into circles. One can also prepare a stuffed kundru by stuffing them and later deep frying them. Ingredients (Serve - 4 pax)
250 Gms Kundru/ ivory gourd/ tendli
1/4th cup cut fresh coconut
1/4th cup raw groundnuts
4 tomatoes/1/2 cup pureed tomatoes
1/2tsp salt
14tsp turmeric powder
1/4th tsp red chili powder
1tbsp coriander powder
2tsp garam masala
For tempering/tadka:
1tsp jeera cumin
1tsp mustard seeds
2 whole red chilies
10 curry patta leaves
3tbsp oil

Puree the tomatoes in the grinder.
Coarsely grind together coconut
and groundnuts.
Cut Kundru lengthwise into four pieces.
Heat oil in a heavy bottomed pan and add the tempering. Stir for 30 seconds till everything crackles.
Add the seasoning and immediately add the cut kundru

Method
1) Puree the tomatoes in the grinder.
2) Coarsely grind together coconut and groundnuts.
3) Cut Kundru lengthwise into four pieces.
4) Heat oil in a heavy bottomed pan and add the tempering. Stir for 30 seconds till everything crackles.
5) Add the seasoning and immediately add the cut. Cover and cook for 2-3 minutes.
6) Add 1/4th cup water and cover and cook for 10 minutes stirring in between.
7) After 10 minutes add the tomato puree and ground coconut and groundnuts. Stir and cover and cook for another 5 minutes.
8) Open the lid and stir and cook till the extra water evaporates.
9) Serve hot.
